The typical dishes of Piura, in Peru, have been influenced by the mestizo culture of the region. This mix includes Spaniards, Africans (slaves from Madagascar or Malagasy), and Chinese laborers, who immigrated to work the rice fields.
Piura is the largest city in northern Peru and is one of the best places to try the typical dishes of this country. It was founded in 1532, it is the first city founded by the Spanish in South America.
The miscegenation that was generated in the region created a gastronomy with great wealth.
Among the desserts the best known is the custard, made from goat's milk, chancaca (sugar syrup) and a very fine rice flour.

1- Green tamales
It is similar to that of other regions of Peru but it is prepared with coriander, which gives it its characteristic color.
It is very fresh and easy to eat. It is prepared with corn, coriander, onion, cheese and sauce made with yellow pepper.
Tamales are cooked in banana leaves and served without the leaf. It has a perfect combination between the sweetness of the corn and the spiciness of the chili pepper.
2- Mashed yucca
A main dish and one of the favorites of the cuisine of northern Peru. It is prepared with roasted cassava and minced pork, mixed with green onions and garlic.
It is served with chifles, which are banana chips. The yuca has a mild flavor, while the pork adds the smoky touch.
It is a dry dish, so a good drink should accompany it.
3- Seco de cabrito with beans
Stew made of very tender goat meat, marinated in chicha de jora and served with broad beans seasoned with onions and fried garlic. It is bathed in coriander sauce.
It is a fairly heavy but delicious dish. Usually the portions in restaurants are very large, so at least two people eat with one plate.
4- Chavelo Dry
Coming from lower Piura, it was invented more than 100 years ago by a man named Chavelo.
The main ingredients are roasted bananas and pieces of meat. It also has green peppers, onion, tomatoes and chicha (fermented corn drink).
This dish is an example of the fusion of flavors of the Spanish, African and indigenous. Despite being called "dry", it is usually quite soft and wet.
5- Piuran Ceviche
These are raw fish fillets cut into pieces and marinated with lemon juice from the city of Chulucanas.
This lemon cooks the pieces of fish in a special way, which gives it a unique consistency and flavor.
It is said that the ceviche can be seafood, oysters and other meats. But actually the true ceviche is piurano, only fish: cachema, mackerel or mixed.
It is served with onion, salt and pepper, hot pepper and some garnish of yucca or sweet potato.
