Two fundamental aspects stand out in the culture of Aguascalientes: its gastronomy and its festivities. Through them, the identity and historical heritage of the state can be understood.
Some of the festivities are related to the traditional agricultural activities that are practiced in the region. It is a way of commemorating the efforts of past generations for whom the countryside was their only way of life.
As for gastronomy, it is a reflection of the identity of the region: a mixture of techniques and raw materials.

The festivities of Aguascalientes
In Aguascalientes, one of the most famous and largest fairs in Mexico is held annually. It is about the San Marcos Fair.
It takes place for a whole month - usually from mid-April to mid-May - and attracts hundreds of thousands of visitors.
Among the cultural and leisure activities carried out are cockfights, concerts by national and international artists or bullfights.
Among the renowned bullfighters who frequently attend are the Spanish Enrique Ponce, José Tomás and Alejandro Talavante. These are top-notch bullfights.
During the first fortnight of August the Fair of the Assumption is also celebrated. In this case, they are exhibitions and markets for fruits, wine, sweets, etc. typical of the region.
It usually culminates in a very famous parade of floats decorated with motifs that evoke fruit and vegetables.
In addition, another festival that should be named is the festival of the grape and the new wine. It takes place in the first half of September.
As the harvest season approaches - grape harvesting and wine making - this fruit and its derivatives are celebrated.
It is about highlighting a millenary tradition and exalting local wine, as well as making known what is produced in other neighboring regions.
The gastronomy of Aguascalientes
The gastronomy of the state is quite heterogeneous and does not respond to a single type of food. Thus, it is easy to find a mixture of typical Mexican flavors -chillies and spices, especially- and international -Spanish cuisine, Asian influence, etc.
The dishes vary depending on whether they are eaten in the diners -restaurants that fill up at dinner time- or in the markets and street stalls of the markets.
Thus, in the first the dishes will be more elaborate. Oven cooked meats, stews simmered for hours and a wide variety of typical dishes abound.
In the latter, it is more common to find tacos, enchiladas, pozoles and other gastronomic products more typical of the country.
Among the most characteristic dishes we could highlight the envinada chicken, the baked kid, the nopales with beans and the ranchero pork meat.
