The typical food of Medellín includes dishes such as the paisa tray, the tripe or the arepas paisas. The recipes of this city show a great influence of the old farmers and muleteers of the area.
These peasants had to quickly cook and consume their food during their long working hours.
Medellín is a city located in Colombia. It is the second most populated city in the country, with more than two and a half million inhabitants.
It was founded in 1616 with the name of Villa de Nuestra Señora de La Candelaria de Medellín. Today it is the capital of the department of Antioquia, with which it shares its great gastronomic wealth.
The most traditional dishes of Medellín have the most representative ingredients of the gastronomy of the city and of the entire department.
Among the most used cereals, corn and beans stand out, while the most used types of meats are chicken, beef and pork.

The 5 main typical dishes
1- Paisa tray
The paisa tray is the dish that best represents the city of Medellín. The origin of this recipe seems to be quite recent, since there are no references before 1950.
The most accepted theory is that it was developed from other dishes, such as the dry Antioqueño or the typical mountaineer.
Its most outstanding feature is the abundance in its presentation. It is so large that it can only be presented in trays; that's where the name of the recipe comes from.
Originally it has up to 15 ingredients, among which are beans, rice, ground meat, chorizo from Antioquia and patacón.
2- Tripe
This soup seems to have Spanish origin. It is believed that it was prepared with some ingredients brought to Colombia by the Spanish colonizers. In fact, there are some dishes in Spain that are very similar to the one served in Medellín.
The most important ingredient in this recipe is the tripe itself, which is the guts of different animals.
It also has pork and chicken meat, hogao, chorizo and vegetables such as potatoes or yucca. In some places they accompany it with ripe banana.
3- Arepa paisa
The gastronomy of Medellín has not only been influenced by the Spanish. It also preserves some dishes that come from the indigenous people who formerly inhabited the area.
Among these recipes is that of arepas, a meal based on corn flour. Nowadays, arepas paisas are very commonly consumed at breakfast time.
They are also taken as an accompaniment to many meals. In Medellín those that are stuffed with cheese stand out.
4- Mazamorra antioqueña
There is no consensus on the origin of this recipe. Some authors relate the food to one that is still made in Córdoba (Spain), so it may have Spanish origin.
It is a very simple soup, which has become a very popular dish throughout Antioquia.
To make it, you only need peeled corn, known as peto. You have to cook it very well, dedicating several hours to it.
To add a little more flavor, it is usually completed with some other ingredient, such as panela and sugar. In Medellín it is very common to add milk to the mix.
5- Antioqueña parva
The origin of the name "parva" comes from the Hebrew and refers to those foods that are neither dairy nor meat.
With that name, a whole set of puff pastry and bakery pieces are known in Medellín and in the rest of the department of Antioquia.
They are usually consumed at coffee time, in the middle of the afternoon. Among these stacks are cheese bread, yucca bread, tambourine or puff pastry cakes.
