The typical food of Antioquia is one of the most representative of Colombian gastronomy with dishes such as the Paisa tray, the Sancocho and Antioqueño beans, the Tripe soup and the Antioqueño chorizo.
This culinary tradition is characterized by the variety of ingredients it uses and the forms of preparation and presentation of the dishes, which enjoy national and international recognition and are part of the identity of Colombia.
The origin of these dishes of Antioquia cuisine is intimately linked to the process of historical development of this region of the country, from pre-Columbian times, through the colonial period and independence to the present.

Typical Antioqueños Dishes
1- Paisa tray
It is the most representative dish of Antioquia cuisine and some authors consider it the national dish of Colombia.
It is prepared in various ways and is presented on a tray, due to its large size, since it contains many ingredients. It has a certain resemblance to the Asturian bean stew.
The most traditional version of the dish consists of a portion of beans with rice, ground or powdered meat, pork rinds, chorizo, blood sausage, a fried egg, sliced red tomato, fried slices of ripe banana, avocado, arepa and hogao (sauces or condiments) to accompany.
2- Antioqueno beans
This traditional Antioquia dish is prepared with beans and enough boiling water, to which carrot, whole banana and bacon are added in the form of pork rinds. It is seasoned with a sauce of tomatoes, onion, oil, pepper, garlic and salt.
Then the sofrito is mixed with the beans, then the ground meat is added and stirred. Finally, a meat stock cube is added to give it more flavor. With all the ingredients incorporated, it is simmered and served.
3- Sancocho antioqueño
This dish is also known as sancocho paisa. It is another of the most representative and traditional of this region and contains a large amount of food.
It is prepared in a large pot, in which all the ingredients are cooked with enough boiling water. Chopped beef and pork, corn on the cob, chopped banana and carrot, potato, coriander and a few others are added to flavor this thick soup.
The sancocho paisa can also be prepared with hen or chicken, along with beef and pork, that is called 'tres meats'. The one that is prepared only with beef, is called sancocho de carne or 'whole'.
4- Antioqueño tripe soup
It is a thick soup very seasoned and with a very characteristic flavor, due to the mixture of ingredients that this popular dish has.
It is prepared with clean beef belly and cut into small pieces. It also has pork cut into small pieces as well, and chorizo.
Sometimes beef is added. It is accompanied by dressings and spices along with potatoes, carrots, rice, yucca, avocado, onion and garlic, among others.
5- Chorizo Antioqueño
This dish, along with antioqueñas black pudding, has spread not only throughout Colombia but also to other Latin American countries.
It consists of a chorizo made with organ meats, based on finely minced pork, skinless bacon, onion, garlic, chopped parsley or coriander, saffron, salt and pepper.
All of these ingredients are mixed together and used to fill the pork entrails.
